Greens 🌱+ cheese 🧀 waffles , a fried egg , crispy bacon , avocado , and micro greens 😋 we had some mixed salad greens in the fridge that were starting to wilt , rather than throwing them away , I blended them with an egg , splash of milk and some homemade yogurt (see my IG highlights for how I make yogurt in a thermos!) , added some plain flour and a pinch of baking soda , as well as some shredded cheese. Mix well and cook in a waffle iron. Planning on remaking this chicken salad avocado sandwich recipe as soon as we get our hands on some chicken 🙈 it’s been sold out here every time we tried to shop. Dice some chicken breast that’s been seared in a pan. Mix the chicken with some green peas (I defrosted some frozen ones) , some diced celery , some cracked pepper , as much avocado mayo as your heart desires , and salt to taste , if needed. Layer with some avocado slices and mixed salad leaves. YUM. I especially love the crunch from the celery. Also , you always ask me how I stack my sandwich so neatly. It’s easy to do when you have big pieces of ingredients like smoked salmon , but if you have mostly small pieces (like here: diced veggies , diced chicken , avocado slices) it’s much more likely that the ingredients will start to fall out everywhere when you cut the sandwich in half , let alone trying to stack them! Kimchi fried rice More like kimcheese fried rice 😍😝 many Korean dishes come with melted shredded cheese: toppokki (spicy rice cake) , Budae jjigae “army stew” , the famous galbijjim short rib stew that is sprinkled with shredded cheese and torched...the creamy cheese helps balance the often spicy dishes. I shaved some cheddar onto my kimchi fried rice and it is delicious! Sometimes I do not enjoy as much the dishes with cheese served at Korean restaurants because they use low quality cheese that tastes “artificial” , which is why I much prefer using @cabotcheese Vermont cheddar in my recipes ☺️ I often prefer using a micro plane to shave the cheese onto my dishes as it is a much finer grate resulting in the cheese melting fast into the food - delicious! To make the kimchi fried rice , simply sauté some diced onions , diced kimchi , diced veggies (I used carrots and cucumber) and (optional) some diced teriyaki spam , when fragrant , add day old rice (no need to warm up) and mix well. Happy toast Tuesday 🥑 feat. Homemade garlic flatbread topped with avocado slices 😋 the pizza dough recipe we used to make pizza a few days ago made 2 extra portions of dough , we stored them wrapped in cling wrap in the fridge and today we rolled them out , and topped them with chopped garlic , sea salt and a little olive oil. Bake at 500F for 7-8min. Let cool a little and top with sliced avocado and red pepper flakes. Using the stash of rice rolls we bought from this small wonton noodle cafe in Chinatown a month ago before all the madness unfolded: these are such a nice treat when you’re staying at home all the time , I’m reaping the benefits from these now. But I wonder how the staff and owner of the cafe are doing 😢 is it still open It was always jam packed when we went , busy staff walking in and out , carrying bowls and bowls of steaming hot wonton noodle soup. They sell these rice rolls plain , and you can season them however you like (a classic sauce is made by bringing some diced ginger , scallions , soy sauce , sugar and water to a boil and taste) You can make them (very few ingredients - google “steamed rice rolls”) and since many of us have more free time , might as well. Happy Sunday! Want a new recipe to try out in the kitchen Make this Onigirazu (seaweed rice “sandwich” - like the sandwich cousin of onigiri). Instructions are in my IG Highlights under “Onigirazu”. A fun way to switch it up from the usual sandwich for sure , not to mention it’s great for those that want to eat sushi but don’t have a sushi bamboo rolling mat. Get creative and utilize ingredients you have in your fridge/pantry. Try smoked salmon , tuna salad made from canned tuna , marinate a piece of firm tofu in soy sauce and sesame oil and sear it in a pan , teriyaki fish/chicken (soy sauce , sugar and mirin). Happy Saturday 💚 what produce do are you have in your fridge/pantry Some veg that we’ve been buying that we find to be less perishable include broccoli (you can clean , chop and freeze) and onions (they last a long time even if you keep them out of the fridge in a dark cool place). I used these in this stir fry rice noodle dish - If you have dried rice noodles (like those used for drunken noodles) you can cook them according to packet instructions and use them in stir fry noodles such as this Beef hor fun 干炒牛河 - you can find the recipe in my IG highlights. Silky slippery wide rice noodles , aromatic soy sauce-based seasoning and crunchy vegetables (the original recipe , well at least the one I grew up eating , has scallions and bean sprouts. More recently I’ve had versions with onions and other vegetables.) I used broccoli and onions as they’re what I have in the fridge. Happy Friday! We had homemade pizza for lunch: homemade dough (read on for recipe) , tomato sauce , asparagus and mozzarella cheese - see stories for the dEATS! In times like this when many grocery items are out of stock and people try to minimize trips to the grocery stores and utilize ingredients from their pantry stash. In the last couple of days we’ve cooked with dry noodles that’ve past their “best by” date , salvaged some sad carrots , and made pizza with tomato basil pasta sauce and mozzarella cheese that’s a week past the best by date - I’m not advising you to eat food that’s gone bad , but I just wanted to share that the last week or two has made us realize how fortunate we are normally. It’s made us eat things past their “best by date” that we normally would never do. We should do our bit in any way we can , and for me , I believe if we’re careful with our foods i.e. checking to make sure there’s no mold and the smell is normal etc. it’s fine to eat food that’s gone by the “best by date” which is usually a guide anyway. I mean , I’ve had grocery items spoil way before their printed “best by date” so it’s more about being smart and checking with your nose 👌🏻 this way I potentially reduce the number of times we go out to the store which is better for everybody: it’s easier for those that are out to keep a safe distance from other people , we minimize our chances of getting sick so lessening the strain on the health system , we use less fuel , and there’s more tomato sauce for those that really need it! Happy almost Friday 💚 continuing to share recipes we have been making during “solitude” - I think I prefer this word over “quarantine”. We have some frozen salmon pieces so I defrosted some and made this super easy salmon + noodles + veggies in under 10min (yes! I tried to target the 10min mark but of course you can do it more leisurely 😬) it’s similar to the salmon + noodles I shared on my feed a few weeks ago but instead of a sweet soy glaze I used miso , to switch things up. Also , I added some Napa cabbage - it’s one of those veggies that keep well for a long time in the fridge. Shared the details in my stories and will save them permanently in highlights!
