SPRING PASTA PANTRY SALAD for a quick weeknight dinner 🍝🥗🌿 If you have canned tuna , chickpeas or salmon in your pantry , any pasta , canned or frozen peas , some pesto , and hummus- this one is for you. . It’s like good tuna salad meets pantry pasta and hummus acts as a dressing. If vegan , do a chickpea salad. Marinate the tuna or salmon in my classic lemony vinaigrette while you cook your favorite pasta. Grab the easy recipe below 👇🏻👇🏻
1 bag of your favorite pasta ( I used farfalle or bow ties , munchkins love) follow cooking instructions
~2 tablespoons of basil pesto 🌿
1 can of low-mercury tuna or salmon
2 tablespoons of hummus (instead of heavy mayo)
2/3 cup of canned or frozen peas OR edamame beans!
handful of chopped green onions 💥
3-4 tbsp of extra virgin olive oil
2 tbsp of fresh lemon juice
2 tbsp red wine vinegar
1-2 crushed garlic cloves
1/2 tsp dijon mustard
sea salt , oregano , fresh black pepper &
sumac to taste. I highly recommend about 1/4 tsp each of sumac and oregano.
I like to add a little extra lemon right before serving! The chives , peas , lemon , pesto and hummus make this super luscious and yum on minimal prep time! #vegetarianfood #pastalove .

Raspberry Mint Lemonade 🌱 My favorite summer drink. It is ridiculously easy to make. You just need lemons (and lime) , raspberries and mint. and if you’d like to make a mock gin and tonic , just sub part of water with tonic water. It tastes so good! (I drank this whole pitcher by myself🙈😁). And of course , There’s no better time than now to add gin to it an drink it all by yourself😂
Here’s a quick recipe:
Raspberry Mint Lemonade
Handful of raspberries (fresh or frozen)
1 liter of water or sparkling water - or even more if you like it less sour
Stevia powder (or some other sweetener of choice - I went for stevia for it is probably the healthiest sweetener I know and it tastes good in this)
Lots of ice
Simply squeeze the citruses , place with crushed raspberries and mint in a pitcher , add water and ice cubes.

Pad Thai Salad with Chicken and Papaya⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 2 generous portions⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 zucchini , zoodled⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 carrot , thinly sliced or shaved with a peeler⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ cup bean sprouts⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ cup coriander , torn⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 chicken thighs⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ Ruby Rise Red Papaya , peeled and de-seeded⠀⠀⠀⠀⠀⠀⠀⠀⠀
Juice of one lime⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 tbs brown sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbs peanut butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbs light soy sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbs Sriracha (optional)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbs water⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat a non-stick pan on medium heat. Add chicken thighs and cook for 3-4 minutes each side until golden brown. Cool slightly then slice and set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀
While chicken in cooking , add sugar , lime , peanut butter , soy sauce , sriracha and water to a small saucepan and gently heat on low to combine to make your sauce. Peanut butter may⠀⠀⠀⠀⠀⠀⠀⠀⠀
not completely combine/melt but it’s no issue. Once combined , set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dice papaya and add to large bowl along with sliced chicken , zucchini zoodles , shaved carrot , coriander , and bean sprout and toss together. Serve on a plate and dress with sauce.⠀⠀⠀⠀⠀⠀⠀⠀⠀
So this morning I was a bloody genius and basically made a cookie dough milkshake 🤤 I served chickpea cookie dough with @kin_nutrition cookies and cream whey protein powder blitzed with ice and cows milk and frozen raspberries 🤤🤤🤤🍪🍪🍪 The chickpea cookie dough is oats , chickpeas , vanilla extract , pinch of salt , chocolate chips , dates , honey , vanilla protein powder and cinnamon combined to a dough in a food processor 🍪
Happy Wednesday everyone! My stomach is feeling much better today (thank goodness) and all I was craving for lunch was a nice refreshing salad , so I threw this one together and honestly it might be my new favorite combo 😍 I found a box of couscous in my pantry so I decided to use some instead of my original plan to do quinoa. I’ve made it an intention during this quarantine to use up lots of the pantry items that I have on hand instead of going to the grocery store to get my usual staples , and so far it’s been really fun getting creative with all the things I didn’t realize I had! Sauté 1 lb shrimp with 1 tbs paprika , 1 tsp Cajun and 1 tbs Olive Oil. Salad bowl ingredients are Romaine lettuce , corn , tomatoes + avocado. Dressing: Olive oil , lemons , salt and pepper.
🍗 CAJUN CHICKEN 🍗
Chicken breast marinated with Cajun , paprika and EVOO then sear until your liking! In bowl add Quinoa , corn , tomatoes + avocado mix with salt , pepper , oil and 🍋 Garnish with pepper and cilantro.
🧀 Mozzarella and Avocado 🧀
What you need: Mozzarella Pearls , avocado and tomatoes with balsamic vinegar , fresh basil 🌿 , oil , s+p.

here’s what ya need: 1 large carrot + 1/2 frozen banana + a little less than a cup of unsweetened almond milk (less if you want it thicker) + 1 tbsp ground flaxseed + 1 scoop vanilla protein + 1 tbsp peanut butter + 1 tsp cinnamon + 1/2 tsp nutmeg + ice. blend & top with hemp seeds & shredded coconut! option to add in greens , collagen peptides , switch out nut milk or nut butter!
