Spiced Coconut Oatmeal
1/2 cup rolled oats
1/2 tbsp ground flax seed
1 tbsp coconut flakes
1 cup unsweetened almond/coconut milk
1/4 tsp pumpkin pie spice
1/2 tsp ginger
Splash of vanilla extract
Pinch of salt
Add all ingredients to a sauce pan and bring to a simmer. Stir and cook on medium heat for 5 minutes then remove from stove top. Top oats as desired and enjoy! 💜

Creamy broccoli soup with smoky crispy chickpeas! 🥰 I’ve been saving broccoli stalks over the last week and repurposed them into a soup because why waste them when you can get creative! 90% stalks/10%florets yielded a less intense broccoli flavor (the celery cut through more than usual) , so I’d use more florets next time. Still creamy and cheesy thanks to nutritional yeast , the MVP of literally every recipe it’s in. 🤤 Plus the smoky crispy chickpeas are the *perfect* topping - I just wish I would’ve made a double batch because I can’t stop snacking on them! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I followed @thefullhelping’s recipe from her Power Plates book! Soup is super tasty but the chickpeas are KILLER.
no bake protein peanut butter chocolate balls 😍🤤🥜🍫 basically just used anything i found in my cabinets to make them and i think they turned out pretty good!! recipe - 1/4c maple syrup , 1/2c applesauce , 1/4c milk of choice , 1/2c powdered peanut butter (didkt have any normal pb left 😢) , 2 scoops chocolate protein powder (it was 32.5g for 2 scoops of mine) , 1/2c coconut flour , chocolate chips. mix everything and roll into balls , store in fridge! •

the ultimate comfort food noodles. what kind any if you ask me. and buckwheat soba noodles happens to be one of my favorites 😩 so flavorful on its own but spice it up a bit and you got a delicious meal. this *sesame soba noodle stir fry* is tossed with fresh veg (feel free to omit or sub with what you got on hand) and crispy tofu. drizzled with a bit of garlic chili oil and a sprinkle of toasted peanuts.
