Here’s a pasta recipe for you that uses only a few basic staple ingredients but really delivers on satisfaction + flavor. Ingredients involve pasta , scallions / spring onions , anchovies , garlic , and lemon 🐟🧄🍋 Hoping this will be helpful to you in some way and sending you all the good vibes! __________________ Serves 2: Cut 3-4 scallions or a small bunch of spring onions cut into 2-3 inch batons. If you can find spring onions , they have a bigger bulb , so quarter those. If you only have scallions , then cutting them into batons are just fine. In a skillet , heat some oil on med-high heat and cook undisturbed until slightly charred and golden in some spots , about 3-5 min. Give everything a toss , remove from heat and keep warm. __________________ In a large saucepan or small pot , cook ½ lb. pasta of your choice according to package directions. Drain , save about ½ cup cooking water. Set pasta + pasta water aside and keep warm. Empty a small 2oz. tin of anchovies (with oil) into the same saucepan , along with a couple of crushed garlic cloves and a touch more olive oil if you’d like. The anchovies should be pretty salty so you don’t need to add any extra salt. Warm up the oil , anchovies and garlic on med-low heat. When things are slightly sizzling , tilt the pot and use a wooden spoon to gently break up + mash the anchovies into the oil until they’re completely disintegrated. When the garlic is fragrant , return the cooked pasta into the saucepan and stir everything to combine. Add in a splash of reserved pasta water if things look a little dry. When the pasta is warmed through , add in the reserved scallions / spring onions , a generous squeeze of ½ lemon , and chili pepper flakes (optional). Enjoy immediately!

Return of my air fryer low carb BBQ meatloaf! This time I doubled the recipe (below) & baked it in an 8x8 dish in the oven. Still turned out amazing. I seriously STILL get a few messages a week (even tho it’s been a WHILE since I posted about it) from people telling me they made it & the whole family loved it - even picky kids! • RECIPE FOR MEATLOAF: 1 lb 85/15 ground beef (I used grass-fed organic because I found some on sale) 1 egg 2 Tbsp heavy cream 1/4 c. onion (grated or chopped SUPER tiny) 2 Tbsp low sugar BBQ sauce (I used @alternasweets plus a splash of Worcestershire sauce) 2/3 cup @porkkinggood crushed pork rinds 1/3 cup grated Parmesan cheese (the powdery kind) 1 tsp parsley 1/2 tsp pink salt 1/2 tsp garlic powder 1/4 tsp ground black pepper • RECIPE FOR THE GLAZE: 1/4 cup @alternasweets ketchup (or other reduced sugar ketchup) 2 Tbsp @swerve brown sugar substitute 1 Tbsp red wine vinegar • Combine all ingredients for the meatloaf in a bowl & mix REALLY WELL (if you don’t mix it enough it will be too moist/crumbly & not hold together). In a SEPARATE bowl , mix all ingredients for the glaze. This time I pressed the prepared meatloaf mixture into greased 8x8 pan , then baked at 375° for 30 minutes. Took it out , spread the glaze over the top of the meatloaf , then continued to cook for another 25ish minutes until done. • This recipe was originally based on a recipe from @the_wholesome_dish , which I thought looked good- then I adapted several things to make it low carb , and I USUALLY make it in the air fryer instead of the oven. Also , the glaze SO MUCH BETTER than just regular ketchup! Classic ⁣Chicken Pot Pie - Slab Style. ⠀ ⠀ I can’t thank Cathy Barrow enough for teaching me how to make a killer pie crust. Every. Single. Time. I’ve always been afraid of pie crust because mine were disasters - years of awful pie crusts , and I basically gave up. I ran across Cathy’s book , Pie Squared and followed her instructions *to the T* (including adjustments for our mile high elevation) - and low & behold - it worked. In an attempt to save money and also not go to there grocery store , I’ve been pulling meals I’ve made out of the freezer. Hello freezer stash!! I am so thankful for you. 🙏 . Here’s a Gnocchi Lasagna that was delicious and I realized I never shared the recipe with you. I love the creamy puffiness of the gnocchi more than lasagna noodles. You don’t need a lot , this dish is filling. And best served with a big green salad. You should try it and tell me if you feel the same about the gnocchi swap. 🥰 . Here’s the recipe - INGREDIENTS: 1/2 lb ground beef 1/2 lb ground sausage 1 onion chopped 1 green pepper chopped 1 can diced tomatoes (or 1/2 pint cherry tomatoes sliced) 1 jar of your favorite spaghetti sauce 1 teaspoon dried oregano 1 teaspoon dried basil Salt and pepper to taste 1 lb ricotta or cottage cheese 1 egg 4 cups shredded Mozzerella cheese (I like to buy a block and shred it myself because it melts better) 1 lb gnocchi (I love the mini variety) DIRECTIONS: Cook beef and sausage until no longer pink , drain and set aside. In same pan cook onion and pepper until soft. Add tomatoes. Stir in spaghetti sauce , oregano , basil , salt & pepper. Let simmer for 15 minutes. Stir in beef and sausage. Set aside. Cook gnocchi as directed on box , drain and set aside. In a small bowl whisk egg and ricotta (or cottage cheese) until well blended and set aside. In a greased 13x9 baking dish (or small individual ones) , layer 1/2 meat mixture , 1/2 gnocchi , 1/2 ricotta mix , and 1/2 Mozzerella cheese. Repeat layers. Cover and bake at 350 for 30 minutes. Uncover and bake an additional 20 minutes. THAI CASHEW SHRIMP: made with pantry and freezer Ingredients! Throwing it back to this super simple and delicious dish from a couple months ago , as I am busy in the kitchen working on some more simple recipes. Happy Wednesday everyone. I hope you all are doing okay , despite the crazy times. I know I’m feeling overwhelmed , tired , out of sorts...but just remember we are all in this together. ❤️ My unwanted advice: just focus on today and breathe. This sauce recipe is an old one , and could use almond or peanut butter. I often use it for pad Thai , but it works just as well with veggies and rice. Make it #whole30 by using some cauliflower rice (an easy freezer staple) and the sauce substitute below. I’m back in the kitchen this afternoon after Ona’s (my new puppy) , first visit to the vet. I was such a proud mama , she did so well 😭 She also learned to go down the stairs by herself! Sending a big virtual hug to you all right now. Please , continue to send requests for recipes...I have been making a list from the messages and comments I have gotten. • • Deets: any type of rice , steamed frozen broccoli , roasted mini red peppers (could easily omit or use any other veggie) , cashews quickly roasted with spices) , frozen wild shrimp seasoned with salt and pepper and tossed in a little sriracha and coconut aminos for a kick and sautéed for 2 minutes per side on medium high. SAUCE: 1/4 cup @georgiagrinders cashew butter , 1/4 cup full fat coconut milk , 1-2 tablespoons coconut aminos depending on how sweet you like it (COULD SUB WITH EXTRA SOY SAUCE AND A DASH OF HONEY) , 1 tbls Soy sauce (sub with more coconut aminos for whole30) juice of 1/2 lime (or more if you like a tang) , 1.5 teaspoons curry powder , 1/4 teaspoon or more red pepper flakes. Whisk together until smooth and creamy!
