kinda really wish I had these pancakes in front of me right now ๐Ÿ˜ซ but ya girl was hungry waking up and had no patience to make pancakes but we can dream right these chocolate chip banana pancakes are always my go-to when iโ€™m down to make a stack. recipe details below. โ€ข 1 ripe banana โ€ข 1 cup almond milk โ€ข 2 cups rolled oats โ€ข 1 tbsp baking powder โ€ข 1/4-1/3 cup dark chocolate chunks Blend all ingredients in a blender until thick and creamy (add more oats if batter is thin. should be pourable but not super liquidy). Pour 1/4 cup batter into a nonstick cooking pan over medium heat. Cook until edges become matte and a few bubbles form. Flip. Sprinkle over a few dark chocolate chips. Cook until golden brown on each side.

Like this creamy , delicious , carby comfort classic. So easy to make , it doesnโ€™t require many ingredients and I donโ€™t know about you but โ€ฆ.pasta just makes me happy! ๐Ÿคท๐Ÿปโ€โ™€๏ธ Iโ€™ve always made vegan Alfredo sauce with cashews but I really love the addition of tofu to this recipe. You canโ€™t taste it , it adds protein and creaminess and this is to date my absolute favorite version! Give it a try and let me know what you think! Stay healthy and kind ๐Ÿ’š ____________________________________ ๐…๐ž๐ญ๐ญ๐ฎ๐œ๐œ๐ข๐ง๐ž ๐€๐ฅ๐Ÿ๐ซ๐ž๐๐จ 1 cup cashews , soaked and rinsed 1/2 block tofu * 1/2 cup unsweetened plain plant milk 2 tbsp nutritional yeast 2 tbsp apple cider vinegar 1/2 tbsp garlic powder or a few fresh garlic cloves 1/2 tbsp dried basil Salt to taste Optional: 1 tbsp olive oil Plus 1 package fettuccine or pasta of choice + 1 cup pasta water 1 large zucchini Baby spinach Fresh basil ____________________________________ Cook pasta according to package directions and reserve some pasta water before draining. Spriralize or cut the zucchini. Add all ingredients for the sauce to a food processor and blend until very smooth. Mix hot pasta with the sauce , pasta water and zucchini , add some spinach and fresh basil and enjoy ๐Ÿ’š ____________________________________ *I used sprouted regular firm tofu. You can omit the olive oil but it adds just a bit more creamy- and deliciousness ๐Ÿ‘Œ๐Ÿผ For a quicker soaking method , I pour hot water over the cashews , let them sit for about 20 minutes (or longer) and rinse them well before blending.
