PROCRASTIBAKE. Day 8 of #bakinginisolation and today I am sharing with you the recipe for a chocolate fudge mud cake. This is a cake that you will want to eat in its entirety. Moist , fudgy and deliciously rich. It’s a cake that made me want to get out of bed to bake this morning. It’s a cake that made me smile. • 225g plain flour • ¼ tsp baking powder • 50g cocoa powder , plus extra to serve • 250g unsalted butter • 250g dark chocolate chips • 330ml milk • 2 teaspoon vanilla extract • 300g caster sugar • 2 eggs , at room temperature Preheat oven to 160ºC. Grease and line a 20cm springform cake tin with baking paper. Sift the flour , baking and cocoa powders into a large bowl and set aside. In a small saucepan , combine the butter , chocolate chips , milk and vanilla extract , stirring on medium heat until melted and smooth. Allow to cool slightly. Add to the dry ingredients alongside your eggs and sugar , and whisk until you have a smooth batter. Pour into your prepared tin and bake for an hour or until cooked when tested with a skewer. Allow to cool completely in the tin. To serve , remove from the tin and dust with additional cocoa powder.

TEN MINUTE CREAMY SPICY ALMOND MISO NOODLES is how I’m starting my week! Happy Monday loves. Hope you are having a great start to the week. I attempted to go for a bike ride this morning , only to realize ten minutes in that I was underdressed for the 39 degree drizzly morning we had...so I ended up turning around and headed back to my garage to play around with some of the new equipment my boyfriend and I got this weekend. I picked up a barbell and he got a pretty sweet speed bag. I literally just made this for lunch and it was so easy and delicious. This sauce would go well with a satay or veggie noodles too. I added some chicken , but you could easily add any other protein...chickpeas , tofu , shrimp , steak etc. I want to know what you’ve been up to...tell me one new thing you’ve done this week! • • • Deets: Gluten free rice and Millet ramen noodles tossed with sliced peppers and shredded cabbage (could use any veggies). SAUCE: bring one cup of broth to a boil (I used @bonafideprovisions bone broth , but any will do) , add 1/4 cup almond butter (I used @spreadthelove) , 1 tablespoon gluten free soy sauce , 2 tablespoons coconut aminos , 2 teaspoons white miso , squeeze of lime , and sriracha to taste (I used about a tablespoon but I like spice). Reduce heat to medium , whisk for about 5 minutes until it gets thick (it will continue to thicken as it cools a bit). Gochujang-marinated chicken in noodle soup with yu choy and some crunchy root veg--purple daikon and watermelon radishes--that I’ve kept since the fall (in a paper bag inside a plastic bag in the fridge crisper drawer). __________________ Serves 2-ish: In a large bowl , mix together ½-1 Tbsp gochujang paste , 2-3 Tbsp soy sauce , 1 tsp sugar , splash of rice vinegar and a dash of garlic powder. Add in 2 skinless boneless chicken thighs and coat all sides. Set aside and marinate while you cook the vegs + noodles of your choice and heat up some store-bought or homemade broth. Divide cooked noodles and vegetables between bowls , but don’t add in the broth yet. Keep warm. In a small bowl , quick pickle the sliced radishes with a splash of rice vinegar if you’d like. __________________ Add neutral oil to a large skillet over medium-high heat , remove chicken thighs from marinade and cook undisturbed for about 3-4 minutes until golden brown on the bottom. Splattering may happen , so be careful! Turn and cook the other side for another 2-3 minutes. Transfer cooked chicken to a plate and let cool for a little bit. Move to a cutting board and slice chicken into strips. __________________ Divide chicken between bowls. Season broth with fish or soy sauce to taste , and while it’s super hot , pour over the noodle bowls. Quickly top with radishes (if you have them) , scallions , sesame seeds and sesame oil if you have them on hand. Serve immediately.

Soft , gooey , moist , delicious gluten-free , vegan , GRAIN-FREE dough! I had this idea in my head for quite some time , and all thanks to my friend Natalie over at @feastingonfruit this recipe came to life! (There’s a video too! Thank you Natalie!) 🎥 ☆ I call this a kitchen win! Hamachi , simply dressed in ponzu , rice vinegar and toasted sesame oil. Topped w ground Szechuan peppercorn , scallions , homegrown pea shoots + beet microgreens and toasted sesame seeds. Serve with a bowl of steamed rice and a little veg/salad for a light lunch. If you can’t find sushi-grade hamachi from a reliable source , the dressing works well with any steamed or simply prepared mild fish as well! Or whatever protein you have , really 😅

TEN MINUTE MEAL: LIGHTENED UP CAESAR PASTA SALAD! Ok so I have made multiple versions of a Caesar dressing/sauce , and this one TRUMPS all of my others as a pasta sauce. I also had some on my salad for lunch yesterday and it was BOMB. Pasta has been in rotation a few times a week lately , because it’s delicious , but also you can make a box and keep in the fridge to add to salads , make a quick meal with and alternate the flavors. I topped this off with some soft boiled eggs for some protein. You can easily make this dairy-free by using dairy free alternatives. Happy Thursday all. Hope you’re having an enjoyable week. The sun is shining and just went for a walk with my little girl , 🐶 Ona. • • • Deets: gluten free penne tossed with this dressing/sauce , avocado chunks , tomatoes , steamed spinach and 6.5 minute soft boiled eggs. SAUCE: 1/2 cup plain Greek style yogurt (use dairy free if needed) , 1 tablespoon olive oil , 1 tablespoon sour cream (use dairy free if needed) , 1 tablespoon lemon juice , 1/2 teaspoon salt , 1/4 teaspoon pepper , 2 tablespoon grated Parmesan (dairy free if needed) , 2 tablespoon water , 1 teaspoon garlic granules (or minced garlic) , 2 teaspoon coconut aminos.
