I made my spring roll in a bowl yesterday and forgot how easy this one was😍it made a bunch too so about to be eating this for lunch & dinner today👏🏻 I used ground beef in this but you can switch up the protein based off what ya have plus this green cabbage seemed to last a while in my fridge so a good thing to use it up with🙌🏻 the full recipe for this spring roll in a bowl is linked in my bio & I’ll share a few other ideas for this week in my stories too! hope you have a great sunday💛

HEALTHIER ROCKY ROAD 🍫 (posting this and reminiscing to happier times when I still had rocky road in the fridge... safe to say I ate this way too quickly 😂) Rocky road would have to be one of the easiest but most delicious slices there are , so I decided I’d make a slightly healthier (and arguably somehow even more delicious) version of this classic. 💁🏼‍♀️ 💛RECIPE💛 - 3 x @macr0mike protein bars (chopped into cubes) - 1/2 cup almonds - 1/2 cup cashews - 1/2 cup pepitas - 1/2 cup cranberries - 400g chocolate (melted) Mix everything together and spread onto a lined tray and refrigerate until set. Then slice and proceed to eat the entire tray of it in a day 😅

You guys know how much I love sweet potato toast & it continues to be one of the go-to's for me to prep during the week😍the options are endless when it comes to topping these & you can prep the sweet potatoes ahead of time to make it even easier to throw together when you want them! Simple Sunday brunch plate. Toaster oven baked brown sugar glazed salmon with crunchy sourdough avocado toast , a crispy fried egg and a kiwi. Hope you’re having a great weekend.

toast & jam is having a moment in my life. homemade bread makes it that much better. and yes , toast thursday is now a thing. — one toast with apricot jam & olive oil , the other with peanut butter , banana & coconut #christineeatstoast

I remade my pizza spaghetti squash this week & forgot how good it was. perfect way to use up the squash that was laying around too. been still all about the easy , quick recipes this week. what have you guys been cooking up sending love! 💛💛 . for the spaghetti squash , I poke holes in it & then microwave for 2 minutes. then cut in half (take out the seeds) & coat with some avocado oil , salt & pepper. bake at 400 for 40 minutes or so. scrape out the inside & mix with marinara sauce (I used the tomato basil from Trader Joe’s). place back in the squash & top with shredded mozzarella & pepperoni. place back in the oven for 5-7 minutes. top with red pepper flakes.
