creamy red curry with rice 🍛 | this dish uses a lot of staple ingredients that you might have on hand & has hecka flavor! recipe below :) have a great weekend , everybody! stay safe! . vegetable & chickpea red curry (serves 3-4) -1 large onion , diced -3 cloves garlic , minced -2 tbsp fresh ginger , minced -2 green chilis , minced (omit for less heat) -1 tsp ground turmeric -1/2 tsp ground coriander -1/2 tsp ground black pepper -4 tbsp red curry paste , or to taste -2 large carrots , chopped -1 14-oz can chickpeas , drained (or 1 1/2 cups cooked) -4 cups chopped vegetables (such as cauliflower and zucchini) or more canned legumes/veggies of choice -1 14-oz can light coconut milk (or use full-fat) -salt + lemon juice + spices of choice , to taste In a large pot , heat some oil and saute the onion , garlic , ginger , and chilis for 5 minutes. Stir in turmeric , coriander , black pepper , curry paste , and carrots. Cook on medium-high heat until fragrant , about 5 minutes , then add in chickpeas and veggies with coconut milk. Cover the pot and bring to a simmer , then reduce the heat and cook for ~10 minutes , or until the vegetables are tender. Season with salt , lemon juice , and spices as desired. Who’d you share it with Recipe: In large bowl combine: 1 red onion (small dice) , 1 large carrot (grated) , large handful baby spinach (roughly chopped) , 1-15oz can chickpeas (rinsed + drained) , 2 tbsp nutritional yeast , 1 tsp ground cumin , 1 tsp smoked paprika , 1/2 tsp garlic powder , 1/2-3/4 tsp chili powder (or to taste) , 3/4 tsp chipotle. Mix well. Add 1-1/2 cups cooked quinoa and mix until evenly incorporated. Add salt to taste. In separate bowl , add 2 cups garbanzo/chickpea flour + 1/4 tsp salt. Gradually add water while mixing until consistency of thick pancake batter. (Should be about 1 cup water.) Add batter to chickpea vegetable quinoa mixture and mix well to combine. Salt to taste. Let sit about 10 minutes. Use hands to form patties of desired size , about 3/4 inch thick. Either pan-fry in a little oil in non-stick skillet or for oil-free bake at 375F on lined sheet until very golden brown (about 25 minutes). I know a lot of you are worried about running out of fruits and veggies. About eating less veggies than usual. About not eating enough variety. And about just eating differently than usual. But here’s the thing: it’s okay. It’s okay if your meals look a little different right now than they normally do. It’s okay if you’re eating less fruits , veggies and variety than usual. And it’s okay if you need a little more comfort food than usual right now too. This has been a crazy few weeks in every way: it’s unrealistic to expect that most parts of your life will look how they normally do. And there’s definitely no reason to add extra stress or pressure to your life by worrying about that. A few weeks is so small and insignificant in the grand scheme of things. A few weeks of meals , snacks and workouts that are different than usual will NOT affect your health overall. In the spirit of imperfect real life: my meals , snacks and workouts have been far from they normally are too. Today’s lunch was a big ol’ PB&J and a few cookies beforehand - no fruit , no veggies - and nothing wrong with that whatsoever 😌🥜🍓
