Recipe of The Cointreau Truffle: Cream - 103gr Inverted sugar - 15gr Chocolate GHANA 40% - 241gr Chocolate EXCELLENCE 55% - 155gr Cointreau - 41gr Butter - 34gr Cocoa butter - 27gr Heat up cream and inverted sugar to 40C , pour onto melted chocolate , cocoa butter and add Cointreau. Mix with hand mixer. Add butter and mix again . Pour into the frame 16x16x2cm , leave to crystallize for 24 hours.
