🌱20-Minute Chickpea Curry (video in highlights)🌱20 minutes start to finish. Very few ingredients. (Oil-free option) 👩🏼‍🍳As someone who went to culinary school , I’m embarrassed to post such an easy recipe! But when you’re feeding 5 people 3 times a day , these easy recipes that my kids enjoy are a blessing. ✅Recipe: ✅Put your rice to cook. ✅Sauté 1 large chopped yellow onion in oil , broth or water until translucent , about 5 minutes. ✅Add 3 minced garlic cloves + 2-3 tsp grated ginger and sauté another 30 seconds or until fragrant. ✅Add 2 tsp ground coriander and cook about another 30 seconds. ✅ Add 1-15oz can (or 1-1/2 cups) cooked chickpeas (rinsed and drained) , 1-2 tbsp Thai red curry paste , 1 tbsp soy sauce or tamari , 1-14oz can regular coconut milk and 1/2 cup water. ✅Simmer 7-10 minutes. ✅Add 2 tsp fresh lime juice and mix. ✅Add 2 tsp brown sugar/maple syrup , or to taste. ✅Adjust hot sauce , lime juice and salt to taste. ✅Serve with chopped cilantro , rice and veggies of choice. . . . #whatveganseat #foodrevolution #veganfood #veganfoodporn #veganfoodie #veganeats #eatplants #eatyourveggies #healthyvegan #vegetarian #plantbased #glutenfree #veganrecipes #veganlunch #veganbowl #veganbowls #vegandinner #veganfoodshare #vegana #vegano #curry #teamself #bestofvegan #feedfeed #highcarb #veganlove #dairyfree #food52 #wholefoods #veganfoodspot

In the “nood” for flavour 🍜⁣ ⁣ I like noodles a ridiculous amount. They’re cheap , they’re easy to incorporate into a range of recipes and they’ve got that texture 😍 Oh man , the texture 🙌🏼⁣ ⁣ I had some noodles , tofu , mushrooms and soy sauce in my fridge / cupboard so I started looking up recipes which could use them up and found a miso tofu & noodle delight from @nadiashealthykitchen which was super easy to make and delicious 😋 ⁣ ⁣ I changed a couple of things about the recipe - I used instant noodles instead of dried rice noodles , I only used 200g tofu as it’s all I had , I used all of the broccoli not just the head as I wanted to use all of it up , and I used soy sauce instead of tamari.⁣ ⁣ I’ve popped the link to the full recipe in my bio for anyone who’s interested 🥰 but here are the ingredients you’ll need:⁣ ⁣ 🌱 Tofu⁣ 🌱 Miso paste⁣ 🌱 Tamari or soy sauce⁣ 🌱 Rice wine vinegar⁣ 💦 Water⁣ 🍜 Noodles⁣ 🍄 Mushrooms⁣ 🥦 Broccoli⁣ 🌱 Ginger⁣ 🧄 Garlic⁣ 🌱 Spring onions⁣ 🌱 Sesame oil⁣ 🌱 Maple syrup⁣ ⁣ Optional:⁣ 🥜 Peanuts⁣ 🌱 Sesame seeds⁣ 🌶 Chilli flakes⁣ ⁣ What’s your favourite noodle based recipe 🍜

Creamy broccoli soup with smoky crispy chickpeas! 🥰 I’ve been saving broccoli stalks over the last week and repurposed them into a soup because why waste them when you can get creative! 90% stalks/10%florets yielded a less intense broccoli flavor (the celery cut through more than usual) , so I’d use more florets next time. Still creamy and cheesy thanks to nutritional yeast , the MVP of literally every recipe it’s in. 🤤 Plus the smoky crispy chickpeas are the *perfect* topping - I just wish I would’ve made a double batch because I can’t stop snacking on them! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I followed @thefullhelping’s recipe from her Power Plates book! Soup is super tasty but the chickpeas are KILLER.
