Dreeeeamy breakfast scenes 😋 here’s what’s in my bowl: chia pudding made with oat milk blended with frozen berries & Greek yoghurt to make it nice and thick , topped with @_brookfarm_ granola , coconut and sliced banana. Chia pudding is one of my favourite highly-nutritious , quarantine-friendly breakfasts: you can make it with whatever milk , yoghurt , blended fruit or liquid you choose. Happy Monday!
happy Sunday! we’re starting our day off on a sweet note with my vegan , gluten-free oat flour crepes , made with only 5 simple ingredients! 🍓I filled mine with a chocolate hazelnut spread , but the filling options are endless- sweet or savory 🤩 full recipe below👇🏼
vegan crepes , makes 5-6:
1 1/2 cup oat flour
1/4 cup tapioca flour
1 tbsp pure maple syrup
1 1/4 cup non-dairy milk , plus an extra 1/4 cup to thin between batches
2 tbsp melted coconut oil or avocado oil
Filling options: chocolate hazelnut spread , yogurt , nut butter , fruit
Whisk together all crepe ingredients until smooth , except for the extra 1/4 cup milk. Heat a large pan on medium heat and spray with cooking oil. Pour about 1/3 cup of batter into the pan and swirl around so the batter spreads thinly and evenly. Cook for about 2 minutes per side. Add 1 tbsp of milk between each batch to thin the batter. Fill with desired toppings
Took the day off of all social media yesterday and I woke up this morning feeling so clear and less heavy in my emotions ✨. I also woke up extremely ready to bake anything and everything , so stay tuned for exciting recipes this week ♥️! Started the day with some vegan chocolate chip waffles 🧇 with the fam , leaving me with a full and happy belly.

Creamy Sun-dried Tomato & Roasted Pepper Sauce by @janetsmunchmeals ❤❤The most flavorful dairy free / nut free no-cook sauce you can make in 3 min!!
Blend the following in a food processor , scraping down sides:
1 cup sun-dried tomatoes (marinated , drained)
1/4 cup kalamata olives
1/2 cup roasted red peppers (drained)
3/4 cup to 1 cup oat milk (can sub another plant based milk)
1/4 tsp garlic powder
Squeeze of lemon juice
Dash of salt and pepper to taste
2 tbsp olive oil (or sub more milk)
Serve with penne pasta , zucchini and asparagus 😋😍.

Maintaining a level of normalcy during quarantine calls for platefuls of fluffy BANANA BREAD BLENDER PANCAKES on Sunday morning 🥰🙌🏻 Threw a little 🥞 + pajamas party for the parents earlier and now we’re ready for funday Sunday featuring distractibaking and LEGO building. If things get really wild later we might download TikTok but that’s TBD 🕺🏻. Sending everyone a big hug! ♥️
BANANA BREAD BLENDER PANCAKES
serves 1 but recipe can easily be doubled , tripled , quadrupled etc.
1/3 cup rolled oats
1/2 banana , mashed
1/4 cup cottage cheese or greek yogurt (these are best with cottage cheese — sounds strange , but it makes them so light and fluffy , and the clumps get blended , so the batter is super smooth)
1 egg (or 2 egg whites)
A couple drops stevia (or sweetener of choice)
1/4 tsp. cinnamon
1. Combine all ingredients in blender or mini cuisinart and blend until smooth. Cook your cakes!
Whipped coffee (Dalgona Coffee) is taking over the internet!!! And for good reason— It’s freaking magical ✨ Have you tried it yet If not , you totally should. It’s like a light mousse in drink form but also thick like a milkshake and seriously just mind blowing like hello where have you been all my life 😭
