Got frozen chicken I got a recipe for ya! Juicy GRILLED HONEY GARLIC chicken skewers w/ creamy cauliflower mash is the answer when your quarantined heart says summer , the stubborn weather says nooope (rainy days like today call for comfort food 🍚) , and your freezer says full (did anyone else stock up on chicken for shelter-in-place). These skewers can be cooked on an indoor grill , but if you don’t feel like taking that extra step , the marinade is just as delicious on chicken (or tofu! or shrimp!) that’s been pan-seared or baked. Endless options , endless deliciousness 👌🏻🥰. Have a good evening , everyone! ❤️ - #whatsonmyplate: CREAMY CAULIFLOWER MASH WITH GARLIC & PARMESAN 🍚: 1 head cauliflower , chopped • 3 garlic cloves • 3-4 tablespoons unsweetened almond milk • 1/4 cup parmesan cheese • 1-2 tablespoons ghee • 1) in a large pot with a steamer basket , steam garlic and cauliflower until tender; add to a food processor along with remaining ingredients; blend until smooth •• GRILLED HONEY GARLIC CHICKEN SKEWERS 🍗: in a medium-sized bowl combine 2 tablespoons honey + 1 tablespoon soy sauce + 1/2 tablespoon vinegar + 1/4 teaspoon ginger + 2 cloves garlic , minced (or 1/2 teaspoon garlic powder); set aside: Cut two chicken breasts into 1-inch pieces; add to bowl and marinate for 30 minutes. Thread chicken onto skewers and grill for 5-8 minutes per side , brushing with garlic ghee , as desired •• sautéed spinach w/ red pepper and parmesan.

SAUSAGES AND MASH! 😍🙌🏼 . . . Another absolute comfort food win for dinner this eve! I’ve had this instant mash for aaages in the cupboard and keep forgetting I have it , so tonight was the night to try it!! I also found ma fave veggie sausages in the supermarket for the first time in FOREVA yesterday so I am a v v happy Em 🤪 ———— The deets: ▫️ Three @lindamccartneyfoods red onion sausages ▫️ Half a pack of @idahoanfoodsuk butter and herb mash - you just add hot water and literally like magic it’s done - purrrrfect for lazy evenings/to keep in the cupboards long term ▫️ A pile of veggies: broccoli , carrots and peas ▫️ And OF COURSE the best partttt - a drowning of Bisto gravy 🕺 ———— SO GOOD! Taking the evening off after another rather up and down day! Time to chill , put on some trash TV with mum and get me a yog bowl goin 😌🤟🏼 Have a lovely eve team! ♥️

roasted veggie bowls aka the tastiest way to eat vegetables🍴 details: air fried cheesy tahini kale , chickpeas , maple mustard cabbage (recipe from @thefirstmess’ cookbook) , roasted s potatoes , carrot fries , lemony asparagus , balsamic red onion , balsamic garlicky cherry tomatoes , @realfoodwithrebecca’s avocado basil pesto , sunflower seeds and flaky sea salt😫

I made this for lunch today & it was an easy throw together meal. even put the spaghetti squash to cook in the oven while I did a home workout , so knocked it both out at the same time😏this was a good way to use up the spaghetti squash that was sitting around on the counter plus the chickpeas in the pantry. shared more in my stories how I threw it together but super simple! hope you’re having a great monday💛💛 . cooked the spaghetti squash (microwave for 2 minutes & then cut in half. bake at 400 for 40 minutes or so). In pan , add a little olive oil + drained chickpeas on medium heat. add in tomato basil marinara + spices (I used sea salt , pepper , garlic powder , thyme , oregano & red pepper flakes) + add in big handful of spinach to wilt. top it on cooked spaghetti squash!

DIRECTIONS: Cut sweet potato into smaller pieces , coat in sesame oil & salt , roast at 400 for 45 min (flipping halfway through) Coat grape tomatoes in sesame oil & salt & roast at 400 in a baking dish for 30 ish min Sauté shrimp in sesame oil , garlic powder , and onion powder until crispy. Add all of that^ to a pan with the rest of the veggies (I steamed the veggies ahead of time). Add a little more oil & lots of liquid aminos & sauté. Top with black sesame seeds once done. --- 2) Chickpea penne pasta with zucchini & dairy-free ricotta / INGREDIENTS: Olive oil Zucchini Onion chickpea penne plant-based ricotta Organic spinach . DIRECTIONS: Heat olive oil in a pan then add chopped onion & zucchini & sauté until tender. Cook pasta & once done , drain & reserve 1/3 cup ish of the pasta water. Add penne & spinach in the pan with the other ingreds , lowering the heat to a simmer. Add the ricotta & a little bit of the water at a time , until desired consistency. Top with salt & pep & Parmesan (optional **would make it not vegan)

Stir-fry is one of my go-to quick and easy meals! 💃🏻🌶🌽🥦🍚 I love that it can be made with either fresh or frozen veggies and a few #pantrystaples. ⠀⠀⠀⠀⠀⠀⠀⁣ ⠀⠀⁣ Take my TOFU STIR FRY for instance… the recipe calls for red bell peppers , onions and broccoli , but you can easily swap in whatever veggies you have on hand. ✅⁣ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣ Don’t have tofu or just not a fan Swap in chicken , shrimp , or another plant-based substitute. ✅⁣ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣ Don’t have the ingredients to make my homemade teriyaki sauce Don’t worry! Just use soy sauce , coconut aminos (so good!!) , tamari or a store-bought teriyaki sauce. ✅⁣ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣ I love serving stir fry over rice (brown , white or cauliflower are my faves) , but I’m sure it would also be delicious over quinoa or another grain. ✅⁣ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣ Head to the link in my bio to grab the full recipe —> @eatingbirdfood
