Juicy GRILLED HONEY GARLIC chicken skewers w/ creamy cauliflower mash is the answer when your quarantined heart says summer , the stubborn weather says nooope (rainy days like today call for comfort food 🍚) , and your freezer says full (did anyone else stock up on chicken for shelter-in-place). These skewers can be cooked on an indoor grill , but if you don’t feel like taking that extra step , the marinade is just as delicious on chicken (or tofu! or shrimp!) that’s been pan-seared or baked. #whatsonmyplate: CREAMY CAULIFLOWER MASH WITH GARLIC & PARMESAN 🍚: 1 head cauliflower , chopped • 3 garlic cloves • 3-4 tablespoons unsweetened almond milk • 1/4 cup parmesan cheese • 1-2 tablespoons ghee • 1) in a large pot with a steamer basket , steam garlic and cauliflower until tender; add to a food processor along with remaining ingredients; blend until smooth •• GRILLED HONEY GARLIC CHICKEN SKEWERS 🍗: in a medium-sized bowl combine 2 tablespoons honey + 1 tablespoon soy sauce + 1/2 tablespoon vinegar + 1/4 teaspoon ginger + 2 cloves garlic , minced (or 1/2 teaspoon garlic powder); set aside: Cut two chicken breasts into 1-inch pieces; add to bowl and marinate for 30 minutes. Thread chicken onto skewers and grill for 5-8 minutes per side , brushing with garlic ghee , as desired •• sautéed spinach w/ red pepper and parmesan.

I made this for lunch today & it was an easy throw together meal. even put the spaghetti squash to cook in the oven while I did a home workout , so knocked it both out at the same time😏this was a good way to use up the spaghetti squash that was sitting around on the counter plus the chickpeas in the pantry. shared more in my stories how I threw it together but super simple! hope you’re having a great monday💛💛
cooked the spaghetti squash (microwave for 2 minutes & then cut in half. bake at 400 for 40 minutes or so). In pan , add a little olive oil + drained chickpeas on medium heat. add in tomato basil marinara + spices (I used sea salt , pepper , garlic powder , thyme , oregano & red pepper flakes) + add in big handful of spinach to wilt. top it on cooked spaghetti squash!

Made this big bowl o’ noodles cause there’s nothing quite as comforting as creamy pasta 🤩 but also because I’m indecisive and wanted a salad but also pasta so you get the best of both worlds here! If you want to take your tastebuds for a treat , make this balsamic cashew cream pasta! So simple + so comforting! I made this recipe to serve my self-isolation SELF so you might want to double up the cream sauce if ya give it a try! In a blender soak 1/4 cup cashews for about an hour , drain the water , add about 1/3 cup of almond milk , 1 tsp garlic , 2 tsp balsamic vinegar , 1 tbsp nutritional yeast , a pinch of salt + pepper + blend! Pour into saucepan + add on your cooked noodles then put on top of a bed of greens + enjooooy!
