Austin spring is definitely in full swing , so I’ve made it my mission to get outside & soak up a little vitamin D whenever I can☀️. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ And though it looks like this season will be mainly enjoyed quarantine-style , that doesn’t mean you can’t still celebrate! Had leftover chicken from last night so I sautéed it with more mushrooms & green onions and ate it with a side salad of butter lettuce , micro cilantro , micro basil & cukes. What are you having over there today

I made this for lunch today & it was an easy throw together meal. even put the spaghetti squash to cook in the oven while I did a home workout , so knocked it both out at the same time😏this was a good way to use up the spaghetti squash that was sitting around on the counter plus the chickpeas in the pantry. shared more in my stories how I threw it together but super simple! hope you’re having a great monday💛💛 . cooked the spaghetti squash (microwave for 2 minutes & then cut in half. bake at 400 for 40 minutes or so). In pan , add a little olive oil + drained chickpeas on medium heat. add in tomato basil marinara + spices (I used sea salt , pepper , garlic powder , thyme , oregano & red pepper flakes) + add in big handful of spinach to wilt. top it on cooked spaghetti squash!

Return of the rainbow fruit tray. Set this out and in under 5 seconds Lizzy was up on the table grabbing for a clementine. And now she has eaten 3. Try this trick if you want your kids to eat fruit & veggies. Notice the cucumbers They weren’t a top seller , but they were tasted!

Έδω , έχω βγει στη βεράντα και με χτυπάει κατάματα ο ήλιος μέχρι να κάνει «ξαστεριά» θα γεμίζω το πιάτο μου Άνοιξη , έλα να σου πω τη συνταγή 🌺🍃🌞 💛 #Recipe & Shooting για το ελληνικό #OliveMagazine Υλικά 500 γρ. αρακά 4 κολοκυθάκια , ψιλοκομμένα 2 καρότα , κομμένα σε φέτες 2 πατάτες , χοντροκομμένες 1 ξερό κρεμμύδι , ψιλοκομμένο 2 φρέσκα σκόρδα , ψιλοκομμένα 3 φρέσκα κρεμμυδάκια , ψιλοκομμένα 1 μικρό ματσάκι άνηθο 80 ml ελαιόλαδο 350 ml ζωμό λαχανικών Φρεσκοτριμμένο πιπέρι Αλάτι 1-2 λεμόνια Εκτέλεση Σε μια κατσαρόλα σωτάρουμε με το ελαιόλαδο τον αρακά , το κρεμμύδι και τα σκόρδα. Προσθέτουμε τα κολοκυθάκια , τις πατάτες , τα καρότα , τα μυρωδικά , τα κρεμμυδάκια και συνεχίζουμε το σωτάρισμα για λεπτά. Προσθέτουμε αλάτι , πιπέρι και το ζωμό των λαχανικών. Χαμηλώνουμε τη φωτιά και μαγειρεύουμε για περίπου 45 λεπτά μέχρι να μαλακώσουν τα λαχανικά , αποσύρουμε , προσθέτουμε το χυμό από το λεμόνι και σερβίρουμε.
