Guys I have to be honest , I’m absolutely exhausted today🙈 We’re trying to get into the online schooling for all 3 kids as well as balance our own work/calls/ meetings , cook , keep up with laundry , clean the house etc etc. I know many of you are feeling the stress , and anxiety levels are high!! But trust me we are all in this together and I think it’s key to take things one at a time or we’re going to go crazy🙊(if we aren’t already losing the plot!!😂). I make light of it but guys it’s not a matter to take lightly... we need to look after our mental health as much as we look after and are concerned about our physical health❤️ Not the caption I would typically post with pies🙈 but I just realized many people asked for the chicken pie recipe and I promised to post it after the steak pies and I completely forget (I’m sorry!). I’m so glad I’m done with those few savouries I do make (Alhumdulillah!) but if you’re still busy , pies are really quick and simple. We sampled these the other night and they’re delicious😍

In the meantime here’s the chicken filling recipe for these pies. Have a lovely , relaxing evening everyone💕
Based on recipe by @feroza_elias
1 kg cubed Chicken fillet
2 tsp ginger garlic
1 tsp garlic
1&1/2 tsp salt
1/2 tsp turmeric
2 tsp green Chillies
1 tsp red masala
1 tsp crushed jeera
1 tsp dhana jeera
1/4 tsp black pepper
1 tsp lemon pepper
Cook all of the above in some ghee until almost dry.. Add
2 onions that have been processed
Cook for a short while then add
3-4 tblsp tomato purée.
1 tblsp Nandos mild peri peri sauce
2 tblsp mayonnaise.
1 potato cubed small
Cook until the potato is soft.
Cool add fresh Dhania
Fill pies...brush egg wash...sprinkle dry herbs. .....

Hainanese chicken rice bowl (khao man gai) basically poached chicken with rice , cucumbers and a homemade dipping sauce. Not pictured: chicken soup from the poaching liquid served with the meal.
I love this dish because it utilizes the chicken in 3 capacities: stock in the rice , the poaching for the chicken and for the chicken soup. I served it with a homemade spicy cilantro ginger dip and topped with crispy garlic & cilantro. Hands down best cozy meal.
