TEN MINUTE MEAL: LIGHTENED UP CAESAR PASTA SALAD! Ok so I have made multiple versions of a Caesar dressing/sauce , and this one TRUMPS all of my others as a pasta sauce. I also had some on my salad for lunch yesterday and it was BOMB. Pasta has been in rotation a few times a week lately , because it’s delicious , but also you can make a box and keep in the fridge to add to salads , make a quick meal with and alternate the flavors. I topped this off with some soft boiled eggs for some protein. You can easily make this dairy-free by using dairy free alternatives. Happy Thursday all. Hope you’re having an enjoyable week. The sun is shining and just went for a walk with my little girl , 🐶 Ona. • • • Deets: gluten free penne tossed with this dressing/sauce , avocado chunks , tomatoes , steamed spinach and 6.5 minute soft boiled eggs. SAUCE: 1/2 cup plain Greek style yogurt (use dairy free if needed) , 1 tablespoon olive oil , 1 tablespoon sour cream (use dairy free if needed) , 1 tablespoon lemon juice , 1/2 teaspoon salt , 1/4 teaspoon pepper , 2 tablespoon grated Parmesan (dairy free if needed) , 2 tablespoon water , 1 teaspoon garlic granules (or minced garlic) , 2 teaspoon coconut aminos. Celebrating Meatball Monday with these DAIRY FREE CHICKEN BROCCOLI CHEDDAR MEATBALLS CAULIFLOWER GARLIC ALFREDO VEGGIE NOODLES! Possibly my new favorite 🙃 These meatballs are tender and delicious and take very little effort , and this Alfredo sauce is creamy , garlicky and pairs perfectly with the flavors of the meatballs. I used rutabaga noodles here (which are my favorite veggie noodles) , but you could sub with pasta or zucchini noodles or spaghetti squash. I also used @bonodisicilia award winning organic olive oil in this recipe and drizzled a little over the top. This olive oil has a rich fruity flavor compared to others I’ve had and I’m loving it lately in dressings and recipes. Paired this with some roasted “Parmesan” broccoli. SO GOOD! How was your weekend! #BonoDiSicilia #BetterWithBono • • • Deets: 1 pound ground chicken (could use turkey too) , 1 cup finely chopped broccoli florets , 3/4 cup finely chopped onion , 1/2 cup finely chopped mushrooms , 3/4 cup shredded dairy free cheddar (or regular!) , 1/4 cup chopped parsley , 1/2 teaspoon salt , 1/4 teaspoon pepper , 1 egg , 2 cloves minced garlic and 2 teaspoons of @bonodisicilia organic olive oil. Mix together with clean hands , roll into 1.5 inch balls and bake on a baking sheet for 20 minutes on 400. CAULIFLOWER ALFREDO SAUCE: 2 cups warm steamed cauliflower , 1/4 cup oat milk (or another dairy free milk) , 1 tablespoon cashew butter , 1 teaspoon dried garlic granules , 1/2 teaspoon salt , 1/4 teaspoon pepper. Blend all ingredients until smooth. GREEK BRUSCHETTA PASTA AND JUICY ROSEMARY OREGANO CHICKEN: swipe to see how I finished off the chicken 🙃 This is the EASIEST pasta , and you don’t need to cook the sauce! I’ve been on a big bruschetta kick lately and this one has gotta be my favorite...made with DILL instead of basil. Also , this chicken was seared and cooked with my tried and true method...always a winner. Now , would you go with or without a balsamic glaze • • • Deets: 1 pound @butcher_box large Chicken breast (pat dry , salted and peppered and air dried in fridge for an hour) then coated in a mixture of 1 teaspoon of oregano , 1 teaspoon rosemary , 1 teaspoon lemon juice , 1 tablespoon Dijon mustard , 1 teaspoon coconut aminos then seared on medium low in cast iron for 9 minutes then flipped and add a little ghee when you flip for about 6 mins (depending on size.) Brown rice pasta tossed with arugula , feta and this bruschetta.
