This Spiced Rhubarb , apple and clementine muscovado crumble is one of my favourites. Deep flavoured and rich from the spices and caramelised sugar. The clementines make the difference. Nice tender ripe ones cooked through (skin and all) creating a lovely bitter sweetness- I got mine from @natoora all the way from Sicily. But rhubarb from the East London garden. You could use pears instead of apples. #travellingwithoutmoving #homecooking #cookingathome method in my stories👆 Spiced fruits 500g ruhbarb trimmed and cut into 1 cm chunks 2 pink lady apples or similar firm , cored and cut into chunks 2 small ripe clementines , cut in half and seeds removed 1 inch of peeled fresh ginger 2 sticks cinnamon 6 cardamom pods- seeds removed 100g muscavado sugar crumble 125g muscavado sugar 75g plain flour 75g unsalted butter 30g blanched almonds Place the sugar and spices in a medium saucepan over a medium heat. When the sugar starts to bubble , add all the fruits and ginger and turn the heat down. Cook slowly for about 40minutes , stirring as you go. The rhubarb will cook down to a rich , thick puree and the apples and clementines will become soft and tender but keep their shape. Turn off the heat and cool. For the crumble topping place everything in a processor and pulse blend for a few seconds. You want a coarse crumb. Heat an oven to 180oc Remove the cinnamon from the fruits mix and transfer the fruit to a baking dish. Top with the crumble mix and place in the oven. Cook for 25 minute or until the crumble starts to brown and becomes “crumbly”. The filling should be hot again. Serve with cream , ice cream , yogurt or mascarpone.

Turned into this southern Italian inspired roast #cookingathome #travellingwithoutmoving method up in my stories👆 Roasted pork with rosemary & fennel seed gremolata , marsala and shallot Serves 4 1kg pork loin on the bone , chined and skin scored 4 sprigs rosemary 1 tablespoon fennel seeds 1 lemon cut in half- and a half for juice 4 bay leaves 2 large banana shallots , cut in half lengthwise 50ml extra virgin olive oil 250ml glass marsala or red wine 4 cloves garlic peeled sea salt , black pepper and olive oil for cooking heat an oven to 210oc place the shallots , bay and lemon in a roasting tray and top with the pork. Rub the meat with oil , season very well and sprinkle over half the fennel seeds. Place in the oven and roast for 30 minutes or until the skin has browned and crisped with a good crackling , lower the heat to 170oc and continue to cook for 30 minutes or until just cooked through. remove the try from the oven to rest. Move the pork onto a plate and then pour the marsala over the shallots in the roasting tin and set over a medium heat. Add a glass of water and then scrape the pan over the heat , reducing as you go and pressing the shallots into the gravy. When its thick and saucy its ready. Pour any pork juices from the loin back into the gravy. While the pork is roasting make the gremolata- place the rosemary , garlic , extra virgin olive oil , half lemon juice and remaining fennel seeds in a pestle and mortar and pummel to a rough paste. Season well. Serve the pork with the sauce and the gremolata.
