Noodle bowl 🥢  🇺🇸 Such a great comfort food for rainy days. We had this bowl for lunch today. Over the weekend , I cooked a few dishes to do a food-for-sweets exchange (in instastories). The process made me realize how much I miss cooking for people! While I love cooking for Jasper and Daisy every day , I’d love to be able to have a bunch of friends over , eat a ginormous feast together , open up some local craft beers , and just enjoy the beautiful weather , delicious food , and amazing company. . . . And that’s the thing - food is about so much more than just eating; it’s not meant to be a solitary experience. It’s about gathering at the dinner table with people you love , and partaking in a shared experience. The delight of that first delicious bite. The bliss (and nice buzz) of drinking in that cold , crisp refreshing beer that perfectly pairs with what you’re eating. . . . Great food coupled with a beautiful , temperate and sunny day is the stuff memories are made of , and something I can’t wait to experience again with cherished friends and family. . . . No joke friends , when this is all over and it’s safe to do it again , we are going to throw one hell of a feast at our place. I’m going to spend an entire day cooking everything I can think to cook , and I’ll make sure it’s an evening we’ll never forget. . . . Pictured here is japchae , bibim guksu , and galbi jjim. Galbi Jjim is a dish my mom didn’t make often , but whenever she did , boy did I love it. I think this one is hard to make all the time because galbi is pretty expensive 😅. It’s so worth it though when you bite into the mouth watering , tender short rib! I also add some flank steak to the mix to add more meat without breaking the bank , and I find it’s quite a nice addition to this dish. . . . Didn’t capture the recording of how I made this this time around , but I’ll get to it soon. It’s really easy to make if you have a pressure cooker and good blender. Sweet Thai Basil Stir Fry 🍃 🇹🇭 — Traditionally this dish is made with Holy basil , a peppery herb hard to find outside of Asia. You might have seen it on restaurant menus as Pad Kra Pao or Holy Basil stir fry. It usually features pork or chicken either minced or cut into very small chunks. Here I have cooked tofu in a specific way to get an incredibly meaty and flavoursome end result. ⁣ ⁣ I've also used Thai Basil as that's all that I could find in London. It's actually not very similar to holy basil so the flavour profile of this dish isn't like the traditional pad kra pao. In its own right though , this dish is a winner. It's succulent and savoury; incredibly spicy , and infused with the beautiful redolence of sweet Thai Basil. Hope you all enjoy. Oh and also - if anyone knows where to get holy basil in London / how to grow it - let us know in ze comments!⁣ ⁣ 👇🏽Recipe👇🏽 (serves 1)⁣⁣ *175g firm tofu⁣⁣ *3 cloves of garlic⁣⁣ *4 birds eye chillis⁣⁣ *2 long red chillies⁣⁣ *4 tbs oil⁣⁣ *3 tbs vegetable stock or water⁣⁣ *0.5 tsp white sugar⁣⁣ *1 tbs light soy sauce⁣⁣ *0.5 tbs dark soy sauce⁣⁣ *handful of Thai basil leaves⁣⁣ —MARINADE—⁣⁣ *1 tbs soy sauce⁣⁣ *1 tsp potato or corn starch⁣⁣ ⁣ Prepare tofu by crumbling it into a fine mince with your hands. This might take a few minutes , be patient the end result will be better! Mix marinade ingredients together then pour over tofu and mix well - let sit for min 20 mins.⁣⁣ ⁣ Mash garlic and chillies in a mortar and pestle. If you don't have one use a blender. If not a blender , use a garlic crusher , failing that and as a last resort finely chop with a knife. Set aside.⁣⁣ ⁣ In a hot wok or pot add oil and add tofu and cook on medium head for 5-7 minutes , stirring vigorously to avoid burning. Your aim here is to draw all the water out of the tofu , while giving it almost a crispy exterior. Once you have achieved this , shift tofu to the side of the wok and and 1 more tbs oil and then throw in garlic and chilli paste and stiry fry for 1 -2 mins. Finally add soy sauces and stock and stir fry for a final 2 mins. Turn off heat , add Thai basil , mix well. Serve with white rice. 🍚🤙🏽

I was feeling pad kra pao but forgot to cook rice so just threw some noodles in and cooked this! Found out afterwards that this fusion dish already exists with spaghetti noodles , and it honestly just makes sense. It’s so good that I immediately made it again the next day and recorded it so that I could share the recipe with you all! . . . I used jjajang noodles for this one (in my highlighted instastories for “key ingredients” it’s the udon-jjajang noodles) , but I’m sure spaghetti noodles would work great for this dish. I also used spinach and hamburger patties instead of basil and ground beef , and find both work really well in pad kra pao! . . . Instructional video coming soon! Oh heyyy tasty Brussels sprouts dish that keeps appearing over and over again on our dinner table!🥰 We have consumed our fair share of this charred Brussels and juicy chicken concoction tossed in a distinctively flavorful sauce that is inspired by signature Thai flavors.💛 One of those amazingly beautiful combination that got thrown together on a fateful day and will now be a signature dish in our household forever and ever...😍🤤. . KIMCHI UDON 🔥: Idk why but this photo gives me good lo-fi music vibes - maybe it’s just the colour of the sunset in the background haha 😌These noodles are pretty hot so I would definitely recommend adding runny eggs to balance it (I have low spice tolerance though) 🥰 RECIPE (revised from @mykoreankitchen): 1. Stir-fry diced onions , mushrooms , sesame seeds , green onion , spinach , a minced clove of garlic , and kimchi on medium heat 2. Prepare sauce: 1 tbsp chilli flakes , 0.5 tbsp gochujang , 1 tbsp soy sauce , 1 tbsp honey , 1 tbsp sugar and 1 tsp sesame oil 2. Prepare udon noodles: boil the noodles until they start to separate. This should only take a minute or so! Remove from water 3. Add sauce and noodles to your pan of veggies and mix well 4. Make any other toppings: I tried to soft-boil an egg but didn’t let it boil for long enough so I just ate the broken whites that resulted when I tried to peel the skin off haha 😢 at least the yolk survived! 5. Garnish the noodles with your egg and more green onion and sesame seeds! Watch the sunset and ease into the new week ✌️

Korean rolled omelette (Gyeran Mari) is super easy to make , delicious , and fun to roll! This one is made with zucchini , Thai red chilis , scallions plus mozzarella cheese , and has become a go to brunch / breakfast item for us. It’s got a nice spicy kick , is packed with zucchini , and the thin layer of mozzarella is 👌. . . . Stangely , Jasper doesn’t like any style of eggs yet. It’s sort of confusing because what kid doesn’t love eggs I can’t wait till she gets on the egg band wagon because these delicious rolled omelets (maybe sans red chilis) will be waiting for her to devour them on that day 😂. Just out of curiosity , anyone else out there whose toddler doesn’t like any form of egg I’ve tried every form imaginable (fried , boiled , steamed , omelets , marinades...) and nothing seems to work. . . .
